摘要
为了在发酵过程中减少双乙酰的产生,防止成品啤酒中双乙酰反弹,利用激光诱变育种技术,选育双乙酰生成量低的啤酒酵母,可解决双乙酰问题。用He-Ne激光作为诱变光源,照射啤酒酵母细胞,在合适的时间和剂量下,得到一株优良菌株。用该菌株酿造的啤酒,其双乙酰值为0.1253mg/L,比原菌株下降了30%。
It's an important task to reduce the produce of the diacetyl during the beer's fermentation and prevent the reforming of diacetyl in ended beer. It is an effective method to the question of diacetyl to breed the diacetyl-less saccharomyces cereveseae by using the technology of laser induced mutation. In proper time and dosage, irradiating saccharomyces cereveseae with He-Ne laser as an induced mutation illuminant,can obtain a strain of diacetyl-less saccharomyces cereveseae. When the beer is made with this strain ,the amount of diacetyl is 0. 1253 mg/L,30% less than before.
