摘要
本文论述了猪劣质肉ＰＳＥ、ＤＦＤ的特性、鉴别方法与ＰＳＳ的关系以及产生的原因。总结了饲料中维生素Ｅ、Ａ、Ｃ矿物质Ｓｅ、Ｆｅ、Ｃｕ及聚不饱和脂肪酸等的含量对ＰＳＥ、ＤＦＤ产生的影响，并提出了预防ＰＳＥ、ＤＦＤ的方法。
his paper expounds the characteristic and discrimination of pork of poor quality PSE and DFD. he relation between the previous pork and PSS and the cause in producing this poor pork. This paper also sums up the influence of the contents of Vitamins E. A, C,minerals Se, Fe. Cu and poly-unsatura teti fatty acid, etc. on the development of PSE. PFD, and proposes the method of preventing PSE and DFD.
