摘要
β-淀粉酶广泛存在于植物和微生物中,植物β-淀粉酶性能优于微生物β-淀粉酶,其在酶制剂行业应用广泛.主要介绍植物β-淀粉酶对底物的作用机理、来源及在植物中的分布、在食品加工领域及发酵行业中的应用及从植物中分离纯化方法的研究新进展,并对今后该领域的研究进行展望.对植物β-淀粉酶的研究进展进行综述将对β-淀粉酶行业有重要的实践及理论意义.
β-amylase exists widely in a variety of plants,microorganisms,and the characteristics of β-amylase from plants have an advantage over that from microorganisms.This article summarized the research of β-amylase in plants,including the enzymolysis mechanism,resource and distribution,application in food and fermentation industry,extraction from the plant and purification method etc.And the prospect of β-amylase in plants was introduced.The review has an important practical and theoretical meaning for enzymes industry.
