摘要
本文报道了松口蘑[Tricholoma matsutake(Ito et Imai)Singer]和青冈蕈(T.quercicola)的生态习性,以及氨基酸、蛋白质等营养成分的组成和含量.调查结果表明,松口蘑的寄主植物为松属(Pinus)植物,而青冈蕈的寄主植物为栎类(Quercus)植物.松口蘑所需的温度、光照高于青冈蕈,但湿度低于青冈蕈.松口蘑子实体中的蛋白质、脂肪、粗纤维和灰分等含量均高于青冈蕈,但氨基酸总量以青冈蕈为最高,青冈蕈子实体中缺蛋氨酸.
The ecology characters and nutrient compositions such as amino acid, protein of Tricholoma matsutake and T. quercicola and their contents are reported in this paper. The observation result indicates that the host plant of Tricholoma matsutake is Pinus and that of T. quercicola is Quercus. The temperature and light requirement for Tricholoma matsutake is higher than that of T. quercicola, but the moisture requirement of the former is lower than that of the latter. It is found that the content of protein, fat, crude fibre and ash in the fruitbody of Tricholoma matsutake is higher than that of T. quercicola, but the amino acid content of the former is lower than that of T. quercicola, and the T. quercicola is short of methioine in its fruitbody.
