摘要
对中国瘦肉猪新品系DⅣ系0~5世代共188头同胞测定猪的肌肉品质进行系统测定。结果表明:其肌肉色鲜,大理石纹适中,pH值适应,系水力强,肌内脂肪含量技高,具有良好的肌肉品质。各世代肉质指标无明显差异,说明世代选育未导致肉质下降。通过肉质性状间的相关与聚类分析,12个肉质性状可分为3类,使性状间的复杂关系清晰地呈现在聚类图上。肉质指标与其他经济性状也有一定的相关,说明在选择瘦肉率的同时还应注重肉质的选择。
We tested 188 pigs from sib testing of the new line(DⅣ)in Chinese lean-typepigs(generation 0~5).The results showed that meat quality was good and ftesh with moder- ate marbling and pH value, with strong water holding capacity and high intramuscular fatcontent. According to the correlation and cluster analysis,12 meat quality were classified into3 kinds of type. The meat quality are related to economic traits. It indicated that we shouldconsider meat quality when we select lean meat percentage.
