摘要
本文以蔗糖、葡萄糖等溶液为对象,对影响过饱和糖液介稳区域宽度的各种因素进行了分析研究;并重点针对在过去的文献中报道较少的压力变化,以及外来添加剂,这二个因素进行了一系列试验研究。结果证明,糖液过饱和介稳区的宽度随溶解压力的增加而迅速扩宽,而不同的添加剂则有不同的加宽或缩窄的效应。
In this paper, it is discussed what are the main factors which can influence the broadness ofthe sub-stable zone of the sugar solution, especially the factors of pressure and. additves. The experi-ments being donedemonstrate that the broadness of the sub-stable zone of the super saturated sugarsolution enlarged as the increase of the pressure during the dissolving prossess, and change as the ad-dition of some additives.
