摘要
“湿冷系统”作为一种新型的果蔬预冷保鲜设施,在发达国家早已得到应用,本文介绍了湿冷系统的基本原理和主要特点,由于运用该系统的冷库具有节约能源、保鲜效果好、运行安全可靠等优点,在我国果蔬加工和储藏作业中将有良好的推广前景,它在鱼、肉微冻保鲜和冷藏食品的解冻方面的应用,也引起人们的重视。
Humidicool System(or Ice Bank)as a kind of coldroom can be used to precool frUit and vegetables and keep there fresh is being exploited in some European countries since 1970'.Its essential eharacteristics including high efficiency of refrigeration and less expense on energy are introduced in the paper.This system will be utilized widely on farms to precool fruit or vegetable and in stores to keep fish or meat fresh in China.
