摘要
采用1%~5%的茁霉多糖溶液对台农六号芒果进行涂膜,并在常温下(室温为28℃,相对湿度为85%~90%)进行贮藏.在贮藏过程中,观察芒果的外部感官品质的变化和测定芒果果实贮藏期间的硬度、酸度、叶绿素含量、可溶性固形物的含量、相对电导率等生理生化指标以及涂膜前后质构的变化,观察其通过变化反映的保鲜效果.结果表明:经1%~5%茁霉多糖溶液涂膜的芒果的感官品质变化率、可溶性固形物和酸度等各项生理指标的变化率均低于未处理的芒果;采用3%茁霉多糖溶液涂膜的芒果在贮藏18天后,果实感官品质和生理指标均好于其他各处理组.
<Abstrcat>Tai-nong No.6 mango fruits coated with 1%~5% pullulan solution were stored at room conditions(28℃,85%~90%RH). The preserving affection was studied by observing the outside sense organ change, by determining the hardness and mango fruit in the course of preserving are preserved, acidity, chlorophyll content, solubility firm shape content, relative conductance rate of thing, etc. physiology biochemical index scribble membrane change that quality construct is it reflect it keep fresh the result to come. The result of study shows: the surface of mango fruit was coated by the film of pullulan, which the sense and internal quality were inflected. The effects of preservation was different from various treatment mango. Excellent quality and the best preserving effect were obtained, when mango fruit was coated by 3% pullulan film after 18 days .
