摘要
以猪、兔、羊、鸡的肝脏为材料,利用高频电感耦合等离子体原子发射光谱仪(ICP -AES)测定了其微量元素Zn、Fe、Cu、Mn的含量,新极谱仪测定了Se的含量,气相色谱仪测定了必需脂肪酸亚油酸(C反18∶2 )和γ亚麻酸(Cγ18∶3)的含量。结果表明,Fe在所测五种微量元素中含量最高,Zn其次,Se最低。四种动物肝脏中,兔肝的Zn、Fe、Se含量(鲜重)最高,分别为3 4 0 0 μg/g,1 5 1 70 μg/g和0 1 4μg/g;羊肝的Cu含量(鲜重)最高,为65 72 μg/g;鸡肝的Mn含量(鲜重)最高,为1 94μg/g。此外,在所测定的两种必需脂肪酸中,兔肝的亚油酸含量(鲜重)最高,为2 4 0 8% ;鸡肝中γ亚麻酸含量最高,为1 0 8%。结果提示,在选用动物肝脏作为营养素源和制备保健品时,应考虑微量元素和必需脂肪酸的含量特点,有效利用其营养价值。
The content of trace elements zinc(Zn),iron(Fe),copper(Cu)and manganese(Mn)in the livers of swine,rabbit,sheep and fowl was determined by ICP-AES and the content of selenium(Se)was determined by new polarograph method.The amount of linoleic acid and γ-linolenic acid was measured by GC.The results show that in the five trace elements determined,the content of Fe is the highest,next is Zn,and Se is the lowest.Besides,in four animal livers,the amount of Zn,Fe and Se (fresh weight)in rabbit liver is 34.00 μg/g,151.70 μg/g and 0.14 μg/g respectively,higher than that of other animal livers.The content of Cu (fresh weight)in sheep liver(65.72 μg/g)and that of Mn (fresh weight)in fowl liver(1.94 μg/g)are the highest in the livers of four animals.Moreover,the amount of essential fatty acid linoleic acid (fresh weight)in rabbit liver is 24.08%,the content of γ-linolenic acid (fresh weight)in fowl liver is 1.08%,higher than the amount in other animal livers.So,when using animal livers as nutrition sources,should consider the characteristics of trace elements and essential fatty acids,and utilize their nutritional value effectively.
