泸州老窖大曲化学特性差异研究 被引量:8

摘要 对泸州老窖生产的国窖曲(优质次高温曲)、传统人工曲、特殊人工曲、饲料曲以及高温曲的化学特性差异进行了研究,结果表明:①国窖曲的酯化力和酒化力高;传统人工曲的糖化力和液化力高;特殊人工曲的酒化力低;饲料曲的氨态氮含量低;高温曲的氨态氮含量高,但酯化力、糖化力以及液化力较低。②国窖曲曲心的糖化力比曲表层低53.60%,而酯化力较曲表层高116.84%,在曲表层中,又以底面表层>侧面表层>包包表层,其余化学特性差异不明显。③优质次高温曲曲表层的糖化力、液化力显著高于曲心,而高温曲则是曲表层显著低于曲心;优质次高温曲不同部位的酯化力均显著高于高温曲相应部位的酯化力,并且酒化力比高温曲高74.91%,但氨态氮含量比高温曲低47.81%。④机制曲和传统人工曲的糖化力、液化力均是曲表层大于曲心,而酯化力则是曲心高于曲表层;机制曲曲表层的氨态氮比曲心高34.98%,而传统人工曲则是曲表层比曲心低25.44%;机制曲发酵醪的酒化力略高于人工曲。 The differences of the chemistry characteristics of Guojiao Daqu high quality sub-high temperature daqu ,handmade daqu by traditional technology,handmade daqu by special technology, feed daqu and high temperature daqu made by Luzhou Laojiao Co. were studied. The results showed that ①The esterifying power and alcohol-producing power of Guojiao Daqu is higher than other daqu. The saccharifying power and liquefying power of the handmade daqu by traditional technology is higher than other daqu. The alcohol-producing power of the handmade daqu by special technology is lower than other daqu. The contents of nitrogen ammonia of feed daqu is lower than other daqu. The contents of nitrogen ammonia of high temperature daqu is higher than other daqu, but esterifying power, saccharifying power and liquefying power is lower than other daqu. ②The saccharifying power of Guojiao Daqu inner is 53.60 % lower than its surface,but esterifying power of the daqu inner is 116.84 % higher than its surface. and underside surface than that side surface which higher than peak surface. Other chemistry characteristics in different part is not significant. ③The saccharifying power and liquefying power of high quality sub-high temperature daqu surface is significantly higher than the inner, but saccharifying power and liquefying power of high temperature daqu surface is significantly lower than the inner. The esterifying power of different part of high quality sub-high temperature all is significantly higher than the high temperature daqu,and alcohol-producing power is 74.91 % higher than the high temperature, but the content nitrogen ammonia is 47.81 % lower than the high temperature. ④The saccharifying power and liquefying power of machine-made daqu and the handmade daqu surface by traditional technology is higher than the inner, but the esterifying power of machine-made daqu inner and the handmade daqu inner by traditional technology is higher than the surface.
