摘要
对大豆与肉蛋奶中的蛋白质、脂类、膳食纤维、矿物质与维生素、生理活性物质等各种营养成分作了对比性研究,指出大豆食品具有极高的营养价值。在我国人民的膳食结构中,增加大豆食品的摄入量,对于提高我国人民的健康水平具有重要作用。我国应当大力加强对大豆食品的开发与利用。
By contrast with meat,egg and milk,this thesis studies the nutritious components of soybean,as proteins,lipids?dietary fiber,mineral elements,vitamins,phytochemicals. It points out that soybean food has much high nutrition value. If we eat more soybean food,it will play an important role in improving our health condition. We should put great effort in developing and utilizing it.
