摘要
研究了几丁质衍生物对不同贮存期草莓中(4~8℃)超氧物歧化酶的活力和维生素C含量的影响。结果表明:经几丁质处理的草莓贮存15~20d时,其SOD活力比对照组高20.1%~53.4%。维生素C含量比对照组高78%~165%.几丁质溶液在草茬的表面形成一半透膜,阻止了微生物的侵染,抑制了草莓的呼吸作用,降低了物质分解的速度。
The effects of chitin derivative on the activities of Superoxide dismutase and the con-tents of the vitamin C in strawberries during storage under 4~8℃ were studied.The strawberriestrcated with the chitin derivative solutions had much higher activities of superoxide dismutase andmore contents of the vitamin C than that of the untreated strawberries. The activities of superoxidedismutase of the treated strawberries was higher 20.1 to 53.4 percent than that of the untreatedstrawberries at the 15th day and the 20th day during storage. The contents of the vitamin C of thetreated strawberries is higher 78 to 165 percent than that of the untreated Strawberries at the sametime. It is because the chitin solution formed a semipermeable membrane over the surface of thetreated strawberries,and inhibited the effection of the microbes and the respirations of the treatedstrawberries.
