可食涂膜对鲜切红地球葡萄粒呼吸强度和品质的影响 被引量:31

Effect of Edible Complex Film on Respiration Intensity and Quality of Fresh-cut Red-globe Grape

摘要 以鲜切红地球葡萄粒为试材 ,分别用壳聚糖、海藻酸钠和羧甲基纤维素可食性膜处理 ,测定了冷藏期间主要生理生化指标和品质变化。结果表明 ,用可食涂膜处理能抑制鲜切葡萄粒的呼吸代谢 ,延缓可溶性固形物和可滴定酸的降解 ,保持硬度 ,减少褐变 ,降低腐烂。其中壳聚糖可食性膜处理组保鲜效果比其他处理更为显著 ,贮藏 75 d,商品率达到 88.1% ,较对照提高 2 5 .1%。 The fresh-cut red-globe grapes were coated with either chitosan complex film or alginate complex film or CMC complex film. Then they were stored at 0℃ and some physiological-biochemical indexes and quality changes were determined every 15 d regularly. The results showed that the edible complex film treatment inhibited obviously the respiration intensity of fresh-cut grapes, lowered the loss of SSC and TA, effectively decreased the rate of water-loss, maintained higher firmness, reduced brown and effectively controlled post-harvest decay. The chitosan edible film was more efficient than the other. During 75 d storage, the rate of rotting still remained low 5.4%, and the rate of commodity was 88.1% and superior to CK 25.1%.
