摘要
HACCP体系是保证食品安全性的预防性质量控制体系,目前正在国内逐步推广。但在实施HACCP系统时,对CCP的确定、系统记录、检验以及工艺优化后任何修正HACCP等方面认识模糊,对HACCP与GMP、SSOP及ISO9000之间的关系难以理顺。针对以上问题,论述了实施HACCP体系的关键问题。
HACCP is a preventive system for food safety that is being introduced in china. But there are still several misunderstandings in the implementation of the system, such as the determination of CCP, recording, inspection, correction and the relationships between HACCP, SSOP and ISO 9000. We discussed our viewpoints on the issues.
