摘要
近代上海在由小县城迈向大都市的自我发展过程中成就了近代“食都上海”。透过近代上海老饭店岁月的闸门 ,本文对近代上海食都的形成进行了全面而细致的梳理 ,充分展现了近代“食都上海”的个性特色 ,揭示了其所体现的近代上海“海纳百川、兼收并蓄”的城市本色 ,并从中勾勒出近代上海城市发展的斑斑足迹。
In the process of self-development from a small county town to a metropolis, modern Shanghai became a gourmet realm. This paper fully shows its characteristics and reveals its embodiment. The contributing factors are modern Shanghai's true nature of absorbing anything different and incorporating anything diverse. The paper also traces modern Shanghai's city development and describes its formation of the gourmet realm.
