香椿芽营养丰富,为优质木本蔬菜。幼芽生长过程中的色泽随花青素、叶绿素含量的交互变化而改变。鲜香椿芽在常温下贮藏,呼吸旺盛、乙烯释放量大、糖分消耗快、易造成脱叶腐烂;4℃下塑料袋包装贮藏可使寿命延长。
Chinese toon sprout is a good arboreal vegetable with high nutritive value.The color of sprout changed gradually during growth as a result of changes in anthocyanidin and chlorophyll amounts. During storage at room temperature, the sprouts respired vigorously, produced a large amount of ethylene and exhausted sugar causing defoliation and decay;however, packing into plastic bags and storage at 4℃ extended their storage life.
