摘要
本文对硒麦芽中硒的存在形态进行了初步的研究。通过采用适当的方法,将硒麦芽粉中球蛋白、醇溶谷蛋白及谷蛋白分离提纯,并分析其硒含量。结果表明60%以上的硒存在于蛋白质中,从而可以认为硒麦芽中的硒主要以硒蛋白的结合形态存在,这与目前的文献报导相一致。
The main form of selenium is studied in selenium malt. By means of the designed method selenium malt in saparated to obtain three proteins. Each of them is analysed for selenium. The result of analysis shows that more than 60% of selenium exists in the form combined with proteins, which is in conformity with references reported before.
