摘要
从食用植物南瓜中提取黄色素，并对其理化性质进行了初步研究．研究表明：南瓜花黄色素在可见光区最大吸收峰波长为４２５～４４５ｕｍ；该色素在不同ｐＨ值下均为稳定的黄色；具有优良的耐热性，耐氧化性和耐还原性．
The author abstracts the yellow pigment from eating plant-cucurbita moschata duch-blossom, and studies its physical and chemical properties. The results is following: the most absorbing wavelength of this yellow pigment is 425-445 urn in visible-light range, this pigment has stable yellow clour under the different PH and has fine property of heat-resisting, oxidation-resisting and reduction resisting.
