摘要
蚕豆是世界上第六大食用豆类作物,作为高蛋白含量作物近年来引起全世界的普遍关注。本文就蚕豆的生产、营养成分、抗营养因子、加工利用的方法技术和途径,做简要的概述,以期人们加深对这种作物的了解。
Faba runs the sixth in the world food legumes production. It has been given great attention in Asia and Africa traditionally. Now it is attracting more concerns from the whole world due to its high protein content. Production, nutritional aspects, processing technology and utilization of faba bean are summarized briefly in this article.
