摘要
对酶法水解脱脂虾粉制备多肽的工艺进行了研究,试验以水解度(DH/%)和酸溶性肽得率(YASP/%)为指标,确定了用胰蛋白酶-木瓜蛋白酶混合酶法水解脱脂虾粉制取多肽的最佳酶解工艺条件为:胰蛋白酶-木瓜蛋白酶的酶量比为 1:2(W/W),总酶量为6000U,脱脂虾粉底物浓度为 4%,pH7.0,温度 60℃,反应时间 6h 的条件下,可使水解度和酸溶性肽得率分别达到 25.91%和 38.46%。
The processing technology of polypeptide from hydrolyzing DSP(degreased shrimp-powder) with protease was studied. The results showed that the optimum condition is the proportion of mixed enzymes (trypsin to papain) 1:2 by weight, the total quantity of protease is 6000U, the density of substratum is 4%, pH is 7.0, the hydrolysis temperature is 60℃ and the reactive time is 6 hours. At the condition, DH (Degree of Hydrolysis) and YASP(Yield of Acid Soluble Peptides) are 25.91%and 38.46%.
