摘要
俗话说,巧妇难为无米之炊,我国面粉制造业目前正面临着断炊的危机,这不是笔者危言耸听,而是从刚刚闭幕的中国面粉行业发展理论研讨会上获得的信息。
China is the world's largest wheat producer with an annual output of 100-120 million tonnes (over 15% of all global production). Wheat is the second (to rice) most commonly consumed staple food in China, and around 90% of the wheat output in the country is milled into flour for human consumption. Nowadays, commercial production of wheat flour in China is very low and production of high-quality special purpose flour is limited. China's flour milling industry operates with significant overcapacity. The reduction of output on wheat leads the flour industry under pressure.
