摘要
本文综述了果醋的营养价值和研究开发的意义及果醋开发的工业现状,重点论述了果醋研究开发的技术路线、生产过程中的卫生质量控制和新技术新工艺的应用,并展望了果醋研究开发前景。
The nutritional value and exploitation significance of fruit vinegar were summarized in this paper.Thetechnical view of fruit vinegar exploitation,sanitary control in production and application of new technology wereemphasized,the market prospect of fruit vinegar exploitation was also reviewed.
