摘要
本文研究了从等外品咖啡豆提取水溶性食品抗氧化剂。该天然抗氧化剂是多组分的混合物,其抗氧化成分力咖啡酸、绿原酸和多种氨基酸。它的抗氧化性能良好,食用安全,有希望成为合成品的替代物。在提取食品抗氧化剂的同时,还分离出咖啡因。
In this paper,we report the water soluble antioxidant abstract from useless coffee bean.This natural antioxidant is a multicomponent mixture with good antioxidative effect,safe in use and is possible to take the place of synthetics.Its antioxidative components are caffeic acid,chlorogenic acid and many amino acids. In this abstracted process,caffeine is isolated simultaneously.
