摘要 花色苷是花青素与糖以糖苷键结合而成的一类化合物 ,可广泛的应用于食品、制药、化妆品等行业 ,常规提取工艺容易使其发生降解、褪色。用CO2 超临界装置对植物原料进行预处理 ,用超声波技术提取花色苷具有时间短、纯度高、提取量大等特点 ,同时具有防止提取物在长时间、高温条件下发生降解、褪色等变化。对超声波提取花色苷的各项工艺条件进行了初步探讨 ,设计了工艺流程 ,研究了超声波提取的温度、时间和提取剂对花色苷提取率的影响 ,得出最佳提取工艺参数为 :在超声波频率为 3 0kHz条件下 ,用浓度为 2 %的稀H2 SO4作提取剂 ,处理 40min ,温度 5 Anthocyanins is a compound of sugar and anthocyanin with indican, could be used on food, pharmacy, cosmeticetc. It's often degradation and discoloring in conventionality extraction techniques. Plant raw material was pretreatmented with supercritical carbon dioxide , and then use ultrasonic waves to extracted anthocyanins, this method has some strongpoint, such as the time is shorter, high purity, extraction volume is big, etc, at the same time, this method could also prevent the extract degradation and discoloring with high temperature for long time. This paper discussde the extraction technology of anthocyanins with ultrasonic waves. designed the technological process, research the influence of the temperature, time and extraction solvent to extracting ratios, and the best extraction parameter were. under the ultrasonic waves frequency of 30kHz, the extraction solvent was 2% H 2SO 4 treatment for 40min, temperature was 50℃, this condition has the highest extraction ratio.
