摘要
采用不同透气性能聚乙烯薄膜袋包装双孢菇进行了低温简易限气保鲜试验.结果表明:在2℃低温条件下,采用PE50保鲜袋包装3d后,O2浓度下降到4.0%左右,CO2浓度达到10%左右,双孢菇的呼吸作用与薄膜的透气率形成了相对稳定的动态平衡,呼吸强度显著降低,褐变度、开伞率及失重率均得到有效抑制.该法可使双孢菇的保鲜期延长5~6d.
Based on the experiments under modified atmosphere, the storage of mushroom with different kinds of PE packaging was researched. The conclusion shows that with the application of PE50, the indexes of storage such as the strength of respiration, BD decreased obviously when the concentration of oxygen drops to 4.0% and the carbon dioxide to 11%.
