摘要
本文对红汁乳菇色素的稳定性进行了系统研究 ,结果表明 :红汁乳菇色素紫外光谱最大吸收波长为 2 5 1nm ,且为单一吸收峰 ;在碱性条件下能稳定存在 ,在酸性条件下随酸度增大吸光度减小 ,颜色变浅 ,稳定性较差 ;对自然光比较敏感 ,耐热性差 ;色素对Fe3 + 较为敏感 ,而Na+ 、K+ 、Ca2 + 、Zn2 + 、Al3 + 、Mg2 + 、Cu2 + 对色素无不良影响 ;色素耐氧化、还原能力较好 ;加入淀粉会使色素增色 ,而葡萄糖、蔗糖。
The pigment stability of Hathudake has been studied. The results showed that λmax was 251nm. It could be stabilized between pH 8-14. It had weak stability of light and heat. Its color was changed by Fe 3+ , but the pigment was not harmfully affected by Na + , K + , Ca 2+ , Zn 2+ , Al 3+ , Mg 2+ , Cu 2+ . It was resistant to oxidation and reduction. Its color could be increased by adding starch, but not by adding glucose, citric acid and sucrose.
