Wheat starches were extracted from 36 wheat cultivars produced in Henan Province and 4 varieties of imported commercial wheat through wet milling. Based on calculating starch extraction rate, wheat starch extraction rate was found to be related with the wheat cultivar. The contents of moisture, lipids, protein and amylose of the wheat starches were measured. The pasting properties were measured by a rapid viscosity analyzer (RVA), and the rheological properties were measured and analyzed by means of regression analysis and cluster analysis. Classification and comparison were made on the basis of starch reological properties. Both the cultivars of Annong 98005 and the Australian soft wheat exhibited similar starch characteristics.
