摘要
研究了苦瓜子衣色素对pH值、糖类及浓度变化的稳定性。结果表明色素在偏酸性或偏碱性的条件下都会加速降解,各种糖类除半乳糖外对色素的降解均有促进作用,而色素的浓度越高,降解越快。
In this paper,the stability to pH,sugars,concentration of the pigment from the seed peel of Momordica Charantia L. were studied.The results showed that the pigment was sensitive to acids,alkalies and sugars.The higher concentration of the pigment accelerated its decomposition.k
