摘要
乳链菌肽产生菌用于发酵食品中可有效的抑制有害菌的生长 ,提高产品质量。综述了乳链菌肽产生菌的分离、筛选和改良及其在干酪、酸奶和其它发酵食品中的应用。
Nisin-producing starters using in fermented food can inhibit the growth of undesirable microorganisms and improve the product quality. It shows the isolation, screening and improving of the nisin-producing starters and its application in the cheese, yogurt and other fermented food.
