摘要
可得然胶(curdlan)是一种新型的微生物胞外多糖,在加热时会形成坚实的、富有弹性的凝胶。目前,山东中科生物科技股份有限公司是国内首家生产可得然胶的企业,并主持起草了可得然胶的国家标准,国家卫生部已于2012年6月份颁布实施。本文简要介绍了可得然胶的性质以及基于该性质将可得然胶应用于鱼糜制品、肉制品、面食制品等食品加工领域的工艺技术,并对可得然胶在新领域的应用进行了展望。
Curdlan gum is a new kind of extracellular polysaccharides,when heated to form a solid,flexible gel. Currently,Shandong Zhongke Biotechnology is the only manufacturer of curdlan in China,which hosted and rafted the national standards related to curdlan,and these standards have been implemented by Ministry of Health,in June 2012.This text briefly introduces properties of curdlan gum,and the application of curdlan in food industry,including minced fish products,meat,flour products etc.,finally some prospects of curdlan' s application are predicted in other emerging fields.
