摘要
利用大米50%,小麦50%,稻谷壳8%~10%,根霉曲0.5%~0.6%,固态法生产小曲白酒,出酒率可达60%~65%(57度计)。曲药配比为:根霉Q303和3866各占50%;酵母菌种2109和K酵母各占50%。该法生产的小曲白酒酒质好、出酒率高。(陶然)
rice, 50 % wheat, 8 %~10 % paddy husk and 0.5%~0.6% rhizopus were used to produce Xiaoqu liquor by solid fermentation and liquor yield could achieve 60 %~65 % (liquor alcoholicity as 57 degree). The proportioning of starter was 50 % Q303 rhizopus and 50 % Q3866 rhizopus, and 50 % 2109 yeast microbial species and 50 % K yeast.
