摘要
目前应用于食品企业的安全管理体系有GMP、SSOP体系、HACCP体系等多种,这些体系对食品生产的防控各有侧重,都不是一个零风险的管理体系。对此,研究糕点生产的食品安全管理体系,必须结合国内糕点类食品所存在的不安全隐患,进行深入的危害分析,以建立HACCP体系为中心,GMP、SSOP体系与之相配套,在糕点企业内部,构筑起各种体系有机结合、全方位的食品安全管理体系。
There are several safety management systems for food enterprises, such as GMP, SSOP, HACCP, etc. However, these systems focus on different parts of food production and are not risk-free. Therefore, combined with the potential safety hazards of domestic pastry products, the paper makes a deep hazard analysis and constructs the food safety management system for pastry enterprise which matches the GMP and SSOP systems and centers on HACCP system.
