摘要 我国辣椒品种资源十分丰富,辣椒中富含的辣椒素在产品深加工、精加工方面已广泛用于食品、医药、保健等行业.主要论述了辣椒素在降糖降脂、抑菌抗炎、抗氧化、镇痛、抑制肿瘤和预防心血管疾病等方面的功效,阐明了辣椒素在未来生物化工产品研发中占据的重要地位. China is rich in pepper variety resources,and its various compounds have been widely used in food,medicine,health care and other industries in deep processing and fine processing.This paper mainly summarized the important functions of capsaicin and its significant effects in lowering glucose and lipid,inhibiting bacteria and anti-inflammatory,antioxidant,analgesic,inhibiting tumor and preventing cardiovascular diseases.Meanwhile,this paper clarified the important position of capsaicin in the future research and development of bio-chemical products.
