来源于传统发酵乳制品的植物乳杆菌对赭曲霉毒素的吸附作用研究 被引量:3

Binding of ochratoxin A by three strains of Lactobacillus plantarum from fermented dairy products in vitro

摘要 对来源于传统发酵乳制品的27株植物乳杆菌对液体培养基内赭曲霉毒素(OTA)的清除能力、清除途径、影响因素进行研究。结果表明,植物乳杆菌是通过吸附作用清除MRS培养基内的OTA,菌株Lp22、Lp39和Lp4的吸附率分别为54.50%、50.79%和48.80%;菌体细胞吸附毒素形成的复合物不稳定,90%添加到培养体系内的OTA可以通过PBS溶液和乙腈/水溶液回收;活性和热失活菌株都具有结合OTA能力,菌体吸附PTA的能力与培养时间、菌体浓度和培养温度有关。 The capacity and the pathway of Lactobacillus plantarum strains to eliminate ochratoxin A(OTA)from liquid medium under varying conditions were investigated.Our results indicated that L.plantarum significantly reduced the levels of OTA in the liquid medium by binding it;the strains Lp22,Lp39,and Lp4 caused a decrease in OTA by 54.50%,50.79%,and 48.80%,respectively.Three L.plantarum strains viable celltoxin complexes were not stable;more than 90%of OTA added to the culture solution could be recovered by PBS and acetonitrile/aqueous solution.The viable and heat-inactivated bacteria could remove OTA.The detoxifying capability depended on the incubation time,concentration of bacteria,and temperature.
