科学认识传染性食品相关流行病

Scientific Understanding of Infectious Food-Related Epidemic Diseases

摘要 当前食品相关流行病尤其是传染性食品相关流行病的负面影响日益显现,严重威胁着全球食品安全和粮食安全,并造成了巨大的公共卫生负担,迫切需要引起更多的重视与应对。本文聚焦于食品相关流行病这一问题展开综述研究,通过对相关术语定义的充分解析、现有文献的广泛研究以及审慎思考,提出了食品相关流行病的定义是"与食品链密切相关(由自然原因或人为原因引发的,暴发的原因可以在食品链的不同层次上找到)、广泛传播并影响人数众多、威胁食品安全和/或粮食安全并损害公共健康及经济社会发展的、传染性和非传染性人类疾病与动植物疾病的总称"。进一步对传染性食品相关流行病进行了分类,并阐述了典型传染性食品相关流行病的特征、暴发案例及其负面影响。希冀能引起社会各界的更多关注,以共同促进食品安全、公众健康和人类经济社会的可持续发展。 Food safety and food security are global issues that concern the survival and development of mankind.At present,the harmful effects of food-related epidemic diseases,especially infectious food-related epidemic diseases,are becoming increasingly apparent,posing a serious threat to global food safety and food security,and posing a huge public health burden to both developed and developing countries"Therefore,more attention and response are urgently neded.This review focuses on the issue of food-related epidemic diseases,with a thorough analysis of the existing literatures and careful consideration by the definition of relevant terms,a definition of food-related epidemic disease is presented:Generic term for infectious and non-infectious diseases in human and animal and plant,closely related to the food chain(the reasons behind an outbreak triggered by natural or mar-made causes,can be found at the different levels in the food chain),widely spread and affecting a large number of people,threatening food safety and/or food security,and harming public health and the economic and social development.Furthermore,the characteristics,outbreak cases and harmful effects of typical infectious food-related epidemic diseases are described.It is hoped that more attention will be paid to food safety,public health and sustainable economic and social development.It is hoped that it can attract more attention from all walks of life,to jointly promote food safety,public health and the sustainable development of human economy and society.
