摘要
胰蛋白酶在近江牡蛎的酶解工艺中酶解温度、加酶量、底物浓度和pH等因素对水解度影响较大。通过正交试验和从能源、节省时间和操作方便性等角度出发,确定牡蛎酶解的最佳工艺条件为:温度45℃,加酶量1.2%,底物浓度1∶2,pH7.0,酶解时间5h。
Trypsin' s enzymolysis on southern oysters shows that the factors like enzyme digestion process temperature, the increase amount of enzyme, substrate concentration and pH have great influence on the degree of hydrolysis. By orthogonal test and from the aspects of saving energy and time and operation convenience, conclusion has been made that the optimum conditions for hydrolysis oysters are : temperature 45℃, the increase amount of enzyme of 1.2%, substrate concentration of 1:2, pH7. 0, digestion time of 5h.
