文摘以大豆(Glycine max)豆粕水解多肽为原料,硫酸亚铁为铁源,比较不同的抗氧化剂对于亚铁离子在溶液中氧化的抑制效果,选择最佳比例的抗氧化剂,通过正交试验优化大豆多肽亚铁螯合物的螯合工艺条件,采用元素分析和红外光谱对合成产物进行表征。结果表明,在抗氧化剂为抗坏血酸,抗坏血酸与亚铁盐的质量比为0.150∶1,多肽与亚铁盐质量比为1∶1,p H 4,反应时间为40 min,反应温度为30℃的条件下,铁螯合率为86.60%,螯合物得率可达46.49%。
