The results showed that the contents of total sugar and reducing sugar in fruit of three cultivars were 45.90%-50.26% and 33.66%-46.94% respectively,Vc content was 0.33%-0.87%, Ca content was 1.2-2.0 mg·g -1. The ratio of essential amino acids to total amino acids was 27.68%-45.85%. It shows that sweet Thai tamarind can be utilized widely in fruit,beverage and food.展开更多
