摘要
文章以不同产地及不用品种的干辣椒、干花椒为试验材料,运用气相色谱-质谱联用技术检测新疆、河南、石柱、印度四大辣椒产区的线椒、小椒、新一代、艳椒、印度椒5大品种干辣椒和江津、武都、西昌、茂县的干青、红花椒中的34种农药残留情况,干辣椒共检测51批次,共检测出26批次有农药残留,占比51%。检出的农药主要有己唑醇、戊唑醇、异丙威、二甲戊乐灵、氯氟氰菊酯、丙溴磷、联苯菊酯。干花椒共检测51批次,共检测出14批次有农药残留,占比27.5%。检出的农药主要有灭线磷、氟唑环、毒死婢、肟菌酯、腈菌唑、甲拌磷砜。结合GB 2763—2021《食品安全国家标准食品中农药残留最大限量》中对香辛料的农药残留含量,分析不同产地及不同品种干辣椒和干花椒的农药残留风险。结果表明,所有样品的农药残留含量均处于安全限量内,超标率为零。
This paper used dried pepper such as line pepper,small pepper,new generation pepper,Yan pepper and Indian pepper from Xinjiang Province,Henan Province,Zunyi City and India,and dried prickly ash from Jiangjin City,Wudu City,Xichang City and Maoxian City as experimental materials,in order to detect 34 kinds of pesticide residues,using gas chromatography-mass spectrometry technology.A total of 36 batches of dried pepper were detected,and 28 batches were detected with pesticide residues,accounting for 77.8%.The main pesticides detected were hexazolol,pentazolol,isoprocarb,dimepenthalin,cyhalothrin,propion bromide and bifenthrin.A total of 39 batches of dried prickly ash were detected,and pesticide residues were detected in 11 batches,accounting for 28.2%.The main pesticides detected were methanophos,fluazolium ring,methanoxime,nitrilazolium and methanophosphone.Combined with the pesticide residue content of spices in GB 2763—2021“National Standards for Food Safety Maximum Limit of Pesticide Residue in Food”,the pesticide residue risk of dried pepper and dried prickly ash in different habitats and varieties was analyzed.The results showed that the pesticide residue content of all samples was within the safe limit,and the excess rate was zero.
