摘要
目的:建立糕点中铝含量快速测定方法,探讨方法的相关条件,比较不同方法下铝含量,确认方法的可行性。方法:应用红外线水分测定仪测定糕点中的水分,超级微波消解进行快速消解,电感耦合等离子体质谱检测。结果:在所选取的水分含量为1%~30%的不同糕点中,红外线水分测定仪105℃时测定的水分与标准规定的条件水分含量最为接近;超级微波消解法可以单酸体系(仅硝酸)快速消解食品中的糕点,消解效果好,环境污染少,消解速度快;检测结果与标准方法中结果偏差不超过10%。结论:采用红外线水分测定仪-超级微波消解-ICP-MS法快速测定糕点中的铝,以扣除样品中相应条件下水分来计算样品干质量,减少样品烘干4 h后样品的变化,更体现最原始的样品形态。该方法简便、快速、消解效率高、结果准确、重现性好,是对食品糕点中铝测量方法的创新。
Objective:This paper established a rapid determination method of aluminum content in pastry.Discuss the relevant conditions of the method and the content of aluminum under different methods,confirm the feasibility of the method.Method:The aluminum content in different pastries was quantitatively analyzed through determination the moisture by infrared moisture analyzer,super microwave digestion for rapid digestion,and inductively coupled plasma mass spectrometry.Result:In the moisture content is 1%~30%of the different pastries,the moisture measured at 105℃is the closest to the moisture content specified in the standard.The super microwave digestion method can rapidly digest pastries in food in a single acid system(only nitric acid),and have good digestion effect,less environmental pollution and fast.The deviation between the test results and the results in the standard method shall not exceed 10%.Conclusion:Rapid determination of aluminum in pastry by infrared moisture analyzerultra wave digestion-ICP-MS was used in this paper.The dry mass of the sample is calculated by deducting the water content under the corresponding conditions in the sample,so as to reduce the change of the sample after drying for 4 h and reflect the most original sample shape.This method is simple,rapid,high digestion efficiency,accurate results and good reproducibility.It is an innovation in the measurement of aluminum in food pastries.
