摘要
羟丙基二淀粉磷酸酯是由天然淀粉经磷酸盐交联和羟丙基醚化共同改性处理得到的一种复合型变性淀粉,其兼有羟丙基淀粉和交联淀粉的双重优良特性。综述了羟丙基二淀粉磷酸酯的制备工艺、影响其性能的因素以及在食品等方面的应用,以期为羟丙基二淀粉磷酸酯的开发和应用提供理论基础和技术支持。
Hydroxypropyl bisstarch phosphate is a compound modified starch obtained from natural starch by phosphate cross-linking and hydroxypropyl etherification.It has the dual excellent characteristics of hydroxypropyl starch and cross-linked starch.In this paper, the preparation technology of hydroxypropyl starch phosphate, the factors affecting its properties and its application in food were reviewed, in order to provide some theoretical basis and technical support for the development and application of hydroxypropyl starch phosphate.
