摘要 本文通过对2017—2021年云南省糕点的食品安全监督抽检数据进行分析,了解云南省糕点食品安全状况,以便为开展专项食品安全监管提供参考。结果表明,2017年1月至2021年12月,云南省糕点共抽检3592批次,检出不合格样品94批次,合格率为97.38%。抽检发现的主要问题是超范围/限量使用食品添加剂和微生物污染,此外还存在糕点品质指标不达标问题。因此,有关监管部门应加强对高风险业态、区域的监管力度,保障消费者的权益。 This paper analyzes the food safety supervision and sampling data of cakes in Yunnan province from 2017 to 2021 to understand the food safety status of cakes in Yunnan province,so as to provide a reference for the development of special food safety supervision.The results showed that from January 2017 to December 2021,a total of 3592 batches of cakes were sampled in Yunnan province,and 94 batches of unqualified samples were detected,with a pass rate of 97.38%.The main problems found in the sampling inspection are the over range or limited use of food additives and microbial pollution.In addition,there are problems that the quality indicators of cakes are not up to standard.Therefore,the relevant regulatory authorities should strengthen the supervision of high-risk business forms and regions to protect the rights and interests of consumers.
