市售笋子烧牛肉中优势腐败菌的分离与鉴定 被引量:2

摘要 从已经腐败的笋子烧牛肉中用稀释涂布平板法和划线分离法分离纯化出纯种菌株,根据生理生化试验结果,查阅《伯杰细菌鉴定手册》与《常见细菌系统鉴定手册》对菌株进行初步鉴定,再经16S rRNA的鉴定,将其鉴定到种。结果表明,笋子烧牛肉中的优势腐败菌为金黄色葡萄球菌、苏云金芽孢杆菌、暹罗芽孢杆菌和枯草芽孢杆菌。 The pure strains were isolated and purified from the rotten bamboo shoots and beef by dilution coating plate method and line separation method.According to the results of physiological and biochemical experiments,and the Berger's Bacterial Identification Manual and Manual for Systematic Identification of Common Bacteria,the strain was preliminarily identified.And they were further identified by comparing their 16S rRNA and constructing phylogenetic tree.The results showed that the dominant spoilage bacteria were Staphylococcus aureus,Bacillus thuringiensis,Bacillus siamensis and Bacillus subtilis.
