摘要
为提高牡丹籽油的油脂品质,采用脱胶、脱酸、脱色三种工艺方法,先后通过单因素实验、正交实验得出精炼牡丹籽毛油最佳的工艺条件。脱胶:柠檬酸量为0.2%,蒸馏水为3%,温度为70℃,时间为25 min;脱酸:温度为65℃,超碱量为0.2%,碱液浓度为11%,时间为40 min;脱色:脱色剂种类为活性白土,脱色剂用量为5%,温度为65℃,时间为35 min。最终得到的籽油质量采用国标法检测后,牡丹籽精炼油的过氧化值、酸价、碘值、磷脂含量均大幅下降,牡丹籽油的品质达到一级食用油的国家标准。
In order to improve the oil quality of peony seed oil,three methods of degumming,deacidification and decolorization were used in this paper.Degumming:citric acid 0.2%,distilled water 3%,temperature 70℃,time 25 min;deacidification:temperature 65℃,super alkali 0.2%,alkali concentration 11%,time 40 min;decolorization:the type of decolorizer is active clay,decolorizer 5%,temperature 65℃,time 35 min.After the final quality of the seed oil was tested by the national standard method,the peroxide value,acid value,iodine value and phospholipid content of the refined oil of peony seed decreased significantly,and the quality of peony seed oil reached the national standard of the first grade edible oil.
