摘要
双孢蘑菇具有较高的食药用价值。试验测定了一株野生双孢蘑菇G1菌株的营养成分,并与市场上双孢蘑菇栽培种AS2796进行了比较。结果表明,G1子实体中水分、粗多糖、灰分、粗纤维和总酚含量分别为91.52%,4.78%,10.30%,2.07%和2.21%,均高于AS2796;氨基酸分析结果表明,G1子实体必需氨基酸占总氨基酸含量的比例高于AS2796;G1子实体中芳香氨基酸占总氨基酸的比例(11.62%)高于AS2796(7.34%);AS2796子实体还原糖、粗脂肪及粗蛋白含量分别为5.91%,2.76%和43.49%,略高于G1子实体。
A garicus bisporus has high nutritional and pharmacological values. The contents of nutrition components in a wild Agaricus bisporus G1 were determined and compared with strain AS2796. The results indicated that the moisture, polysaccharides, ash,crude fibre, and total phenol contents of G1 were 91.52%, 4.78%, 10.30%, 2.07% and 2.21%, respectively, which were higher than that of AS2796. The essential amino acid of G1 accounted for total amino acid was higher than that of AS2796. The aromatic amino acids accounted for total amino acids of G1 was higher than that of AS2796. The reducing suger, crude fat and crude protein contents of AS2796 were higher than that of G1.
