摘要
本文梳理了中国北方发现的龙山时代至两汉小麦及其相关遗存,并结合历史文献中的记载,将小麦的栽培历程分为三个发展阶段:而各阶段时空特点的形成,应是人们在不断进行经验总结和技术革新的基础上,由自然环境、种植技术、加工技术等多种因素综合作用、相互影响的结果。
The substitution of wheat for millet as the principal crop in the dryland farming system had profound impacts on ancient Chinese society. By analyzing and comparing historical literature and wheat-related archaeological material from the Longshan Period to the Western and Eastern Han Dynasties discovered in Northern China, this article divides the cultivation and popularization of wheat during this longue duree into three phases. The spatial and temporal features of each phase and their formation processes are then discussed. This article concludes that the formation of different features in different phases were results of the interaction and interplay of various factors including natural environment, farming regimes, and processing technology of wheat-related food,which were also based on the summary of past experience and technological innovation.
