摘要
为了解决肉牛屠宰加工企业生产条件差、牛肉初始菌数高、货架期短、产品安全性难以保障等问题,试验对牛屠宰、分割过程中微生物污染状况进行了系统调查,并以人为喷洒菌液的牛肉为研究对象,采用高压水冲洗、臭氧水喷淋、臭氧处理、高压水冲洗协同抑菌剂、臭氧水喷淋协同抑菌剂似及高压水冲洗和臭氧水喷淋协同抑菌剂等6种减菌方式对牛肉进行减菌处理,以未经减菌处理的牛肉为对照,测定牛肉贮藏期间菌落总数及大肠菌群数的变化,并研究不同减菌方式对牛肉的减菌效果。结果表明:6种减菌方式的减菌效果均显著优于对照组(P<0.05),其中高压水冲洗和臭氧水喷淋协同抑菌剂的减菌效果最佳,减少菌落总数为1.67 lgcfu/g,减少大肠菌群数为1.85 lgcfu/g。说明高压水冲洗、臭氧水喷淋与抑菌剂三者具有很好的协同减菌效果,是一种比较理想的减菌方法。
The aim of this is study to is solve some problems about beef such as the poor producing condition in slaughter and processing enter- prise,such as high initial bacterial count,short shelf life,unguaranteed product safety and so on.In this paper,the microbial contamination of cattle during slaughter was investigated systematically,and the effective control measures were put forward for the actual production of the enterprises.The beef which sprayed with bacteria as research objects.Six ways of reducing bacteria including high pressure water washing,ozone water spray,ozone treatment,combination of high pressure water washing and antimicrobial agents,combination of ozone water spray and bacteriostatic agent,combination of high pressure water washing anal ozone water spray and antimicrobial agent were used to treat beef with artificial spraying bacteria,and the untreated beef was used as control The change of general bacterial populations and E.coli groups on the surface were detected during the beef storage period.The results show that the effect of 6 kinds of way of bacteria reduction were significantly better than that of controI group (P <0.05),of which the way of combination of high pressure water washing and ozone water spray and antimicrobial agent is the best.The total number of bacterial colonies reduction was 1.67 Igcfu/g,and the reduction number ofE.coli groups was 1.85 lgcfu/g under this condition.This study illustrates that the way of combination of high pressure water washing and ozone water spray and antimicrobial agent is an ideal method of reducing bacteria.
