摘要
腐乳生产与微生物的关系非常密切,微生物对腐乳的生产和品质起着主要作用。了解微生物在腐乳生产中的作用对改善产品品质有很大帮助,因此该文简要介绍了微生物对腐乳品质的有利作用和危害,利用生物技术提升微生物的有利作用,并对微生物的危害提出了一些预防和消除危害的措施。
Relationship of sufu production and microorganisms is very close and microorganisms play a major role in production and quality of sufu. Understanding of effects of microorganisms in sufu producing has great help on improvement of its quality. Positive and negative effects of microorganisms on the quality of sufu were briefly introduced. Application of biotechnology in promotion of beneficial effects and approaches for prevention and elimination of hazards were proposed.
