摘要
稻米爆腰主要有两方面的原因:一是稻谷自身的因素,包括收割、脱粒、干燥和贮藏方式不当等;二是在加工过程中产生,主要在砻谷、谷糙和碾米抛光阶段。推行分级砻谷工艺,合理选配加工设备可以减少稻谷加工中爆腰与破碎问题。
