摘要
作为一种天然绿色保健产品,麦绿素因含有丰富的矿物质、维生素、酶等有益人体健康的营养素,而越来越受到人们的青睐。文章介绍了麦绿素的原料来源、生产工艺、营养成分、安全性、保健效果及开发利用现状,同时提出了麦绿素今后研究应注意的一些问题和研究方向,为麦绿素的生产提供了可借鉴的依据。
The technology of producing polypeptide in hydrolyzing CGM by protease is studied.In this experiment, the optimum technology conditions are defined with the indexes Degree of Hydrolysis (DH%) and nitrophen (X%).The results indicate when pH value is 10.5, hydrolysis temperature by protease is 60 ℃, the volume of protease is 5% and the quality score is 8%, DH% and X% can be arrived at 49.7% and 51.2% by 4 hours hydrolysis.
